Raspberry and White Chocolate Scones

This Raspberry,White Chocolate Scone recipe is simple to do and very tasty, enjoy.


1/3 cup Granulated sugar
2 cup All-purpose flour (or simply mix 1 cup of plain and 1 cup of self rasin flour together)
2 ts Baking powder
1/2 ts Salt
1/4 cup butter
1/2 cup Heavy (whipping) cream
1 lg Egg
1 1/2 ts Vanilla extract
6 oz White chocolate, cut into 1/2 inch chunks
6 oz Fresh raspberries, cut into small chunks

1 Preheat oven to 375 degrees
2 In a large bowl, stir together the flour, sugar, baking powder, and salt
3 Cut the butter into 1/2 inch cubes and distribute them over the flour mixture.
4 With your fingertips rub the butter into the flour, until you get a mixture that resembles coarse crumbs
5 In a smaller bowl, stir together the cream, egg, and vanilla extract
6 Then add the cream mixture to the flour mixture and knead until combined
7 then knead in the white chocolate and raspberries
8 With lightly floured hands, pat the dough out on a floured work
surface to a thickness of your finger
9 Cut circles in the dough with a biscuit cutter. Gather the scraps of dough together and repeat till all the dough is used.
10 Bake scones on ungreased baking sheet for 15 to 20 minutes, or until lightly browned on top
11 Place baking sheet on wire rack for 5 minutes, then transfer scones to wire rack to cool down
12 Serve warm or cooled down completely and store in an airtight container.

Makes 8 or 9 scones :)


If you don't have any biscuit cutters, you can use a cup or glass to get the shape.

Or even forget the cutter altogether and merely tear pieces of the dough and place them on to the baking tray. A great technique to use if the kids are getting involved.
